Fresh Ricotta Crostinis with Tomatoes and Herbs

Ingredients:

For the Tomato-Ricotta Crostini
Baguette Slices
Fresh Ricotta
Cherry Tomatoes, Halved
Garlic Cloves
Fresh Herbs (chives, basil, oregano, parsley, or mint)
Extra Virgin Olive Oil
Balsamic Vinegar
Salt and Pepper to Taste

Procedure:
1. Preheat the oven to 350F. Spread the baguette slices on a cookie sheet and toast 8-10 minutes until golden brown.
2. Rub the baguette slices with a clove of garlic. Top with the fresh cherry tomatoes and a few dollops of ricotta. Sprinkle with salt and freshly ground pepper.
3. Top with fresh herbs and a drizzle of extra virgin olive oil and balsamic vinegar.
