Maître d’Hôtel Butter
Top fish, chicken, or even steak with thin slices of this butter, or stir into pasta.
Ingredients:
1/2 cup unsalted butter (1 stick if not using homemade), softened
2 tablespoons finely chopped parsley
1 tablespoon fresh-squeezed lemon juice
Salt, to taste
Procedure:
1. Combine the butter, parsley, lemon juice, and salt in a small bowl.
2. Roll butter into a log using plastic wrap or wax paper, and refrigerate or freeze until firm.
Other Compound Butter Ideas:
(for 1/2 cup of unsalted butter)
Shallot butter - combine butter, one small finely minced shallot and a pinch of salt
Spicy cumin butter - combine butter, 1/2 teaspoon ground cumin, a pinch of salt, and 1/4 teaspoon of cayenne
Garlic butter - combine butter, 2 finely minced garlic cloves, a pinch of salt, and 3 tablespoons finely chopped parsley
Truffle butter - combine butter,1 teaspoon truffle oil, 1 finely minced garlic clove, and a pinch of salt
Orange butter - combine butter, 1/2 teaspoon finely grated orange zest, 1 teaspoon orange juice, and a pinch of salt
Herb butter - combine butter and 3 tablespoons mixed herbs (parsley, chives, basil, tarragon, etc.)
Chili-lime butter - combine butter, the juice of one lime, 1 tablespoon good-quality chili powder, and cayenne to taste
